Cooking with a 40 quart pot

Hi Ellen, great site!
I would like to use a 40 quart pot to poach boneless, skinless chicken thighs. How many can I fit pot and what should the water to chicken ratio be? Thanks!

1 pound makes 2 cups of meat, so counting simmering liquid (use stock, not water, if possible). 1 pound needs about 3 cups cooking space. So if you try to fill a 40 quart pot )you would do about 36 quart), you are talking 40-50 pounds- hard to handle, doesn't heat evenly, etc.
I would do these in 2 roasting pans in the oven at 325 degrees, cover the meat with liquid, then cover the panss.
