Im having a bridal shower in June for my daughter, I wanted to make chicken kabobs for it. We will be having 30+ people can I make ahead and cook 2 hrs early and keep warm? Also how many chicken breast will I need? And mushrooms and bell peppers?

These will not hold. Take a look at the Orange Dijon chicken or chicken marsala recipes on this site; you need something with sauce.
