For 100, as "not the only salad":
15 pounds broccoli florets blanched OR may use part broccoli slaw) (thats about 25 pounds raw)
8 cups crumbles of crisp bacon
4 cups chopped red onion (or fine rings)
8 cups frozen peas (some people use raisins)
8 cups slivered toasted almonds or walnuts
3 quarts to 1 gallon mayo
2 cups cider vinegar
4 cups honey
Blanch the florets: boil salted water, cook just 1 minute; turns bright green. Plunge into ice water to stop the cooking.
Whisk up the dressing. Put all the stuff except the nuts on the broccoli, pour on the dressing and toss. Shortly before serving, sprinkle on the nuts and toos
