can you bake rice in the oven?

Hi, I wrote last week & can't find my question/your answer, so I'll try again.
We're cooking chicken w/ cream of mushroom soup over rice for 30-40 adults.
Question 1- how much rice will I need?
Question 2- what's the best way to cook the rice? someone told me to bake it in the oven
What's your opinion?
