I am baking 600 potatoes in 3 large ovens for a crab feed. After they are cooked i am placing them in a warming oven before serving. I have previously taken them out of oven and placed in a cooler - which they continued cooking and they became to far gone - turned dark inside
My question is - should i slightly undercook them so they can finish in warming oven or will they remain the same as coming out of oven.
What is your suggestion of cooking time - in the past I have cooked them for 2 1/2 hrs - I also put foil on them - after reading your info on this I may not do it.

If you are holding for hours, do undercook slightly. 2 1/2 hours is a very long cooking time. Do drop the foil.
