I am making a penne dish with pesto sauce for New Years Eve. My plan is to make it ahead of time and put in buffet warmers to serve. Should I cook the pasta all the way? Or should I cook it al dente (or even less). I'm wondering if it will get mushy in the warming trays as the night goes on?

Cook it just barely al dente. It will get mushy after about 2 hours in chafers; consider a baked dish such as lasagna or baked pasta with chicken- take a look at these recipes on site.
