How many pounds of penne do I need to make a full tray of penne with vodka sauce. How much vodka sauce do I need?

Mary, these trays come in 2 1/2, 4 and 6 inch depths. Which do you need?

I'm making a large sterno tray of it (like the ones the caterer uses). I think it's about 2 1/2 inches in depth. Also, I'm having 30 people and right now have large trays of: penne vodka, meatballs, briskette, sausage and peppers and a lasagna. I will also be having some appetizers. Do I have enough dishes?

This is 7-8 quarts volume, and 1 pound dry penne makes about 2 quarts. You need 1 quart of sauce per pound, so, 4 pounds and 4 quarts will give you a bit more than you need, and should be plenty.
I would add a tray of cooked (eg green) veggies, or a fruit tray.
