What all (and how much of each) do I need to make sweet potato souffle for 150 people?

Sweet potato casseroles, you use about 30 pounds drained ready to mash for each 100, so you need about 45 pounds.
How much of a souffle effect? They don't truly souffle, but the amount of eggs, with the white beaten separately and folded in, gives the lightening or lift.
