Bread Pudding in an electric roaster

I'm looking for a bread pudding recipe that can be totally cooked in an electric roaster. I have tried a white bread recipe and it was too mushy. I cooked it for two hours and tossed it after an hour (300 degrees the whole time). Maybe I just have the wrong amounts for a recipe that would yield 50 servings. Thanks for any ideas.

For the roaster, you need to cut the liquid about 1/4, nothing evaporates.

maybe turkey dressing? in a roaster?
I wondering if it would be easier to make turkey stuffing instead. Would this cook up in a large quantity? I'm trying to avoid mushy dressing. Thanks.

Kay, roasters cook moist, it's their nature. You need to make the dressing with very light amounts of liquid.
