Stuffed Flank Steak
Hi Ellen,
I am hosting an engagment party for 75 and plan to make 15 2lb stuffed flank steaks, my question is can I stuff, roll and tie the steaks the day before and store in the refrigerator then sear and cook the day of the event? If so, how many days in advance can I do this. I am stuffing them with provolone, spinach, salami and breadcrumb mixture.


Stuffing a day or two ahead is fine, as long as you keep them in the fridge except when you are actually handling them- 48 hours before cooking.
