Wedding Appetizers

I'm doing appetizers for a wedding. Cheese and Crackers, Pepperoni, Summer Sausage, pinwheels, rye boat, cocktail weiners and a chocolate fountain. They are expecting 275 guests, appetizers will be available for about 1 hour then followed by a meal. How much do I need of each?

Nicole, you are doing a chocolate fountain before a meal? Unusual. See the chocolate fountain page, allow about 4-5 dippers per person. I would do fruit trays instead.
As for the rest:
4 ounces total per person for all the meats. I would do 1/2 wienies and 1/2 suasages
2 pinwheels per person
1 1/2 ounces cheese and 1 to 1 1/2 ounces crackers per person
Not sure what a rye boat is?
