This is a different type of question. Hope you can help. We are planning a Spring potluck lunch for 120 at our church. The ladies helping think our menu should consist of salads, bread, and desserts. I don't know how we could control size of salads to make sure we have enough food and don't you think we should have protein, maybe meatballs. Thank you for any input you may have.

You can have plenty of proteins at a salad luncheon, from chicken salad, egg salad or tuna salad to cheese, nuts, marinated beans, shredded ham or beef, or grilled chicken; cottage cheese, or deviled eggs.
Or a rich hearty soup.
