I am catering a party for 175-200 people. It is an open house. They are having 2 types of meatballs, chicken wings(sauces on the side), polish sausage steamed in beer, cheese tray, veggie tray, crackers, bread and assorted butters. How many lbs of polish sausages, wings and meatballs do I need? Do you have a good method for the polish sausage? Open house is 6;00-11;00. 80th birthday
Those arriving from 6 to 8 will eat about twice as much as those who come later, and usually about 1/2 come then.

2 types of meatballs, 1 pound per 4 people
chicken wings(sauces on the side), at least 4 per person, 6 is not too many
polish sausage steamed in beer, 40 pounds, pieces
cheese tray, at least 16 pounds, some can be spreads or logs
veggie tray, I would do 2 of my relish trays for 60 and1 veggie tray for 100 with dip, see the veggie tray page
crackers,about 12-14 pounds
bread about 22-24 pounds
assorted butters about 10 pounds

I would add fruit trays, see the fruit tray page, 1 1/2 to 2 times the deluxe tray for 100.

You could use 2 electric roasters in the kitchen to prep the sausages, keeps the ovens clear and can be turned to 160-180 to hold.
