rice flour
I have to use rice flour instead of all purpose flour. Do you mix tapioca and potato starch in it's place? I can't use xanthan gum, it's made of corn, can't have corn. please help!
Kathy there are lots of gluten free blends, different ones work for different types of recipes. Check out the book, "The Gluten-free Gourmet bakes" for more ideas. They do not do very well for yeast breads, OK for quick breads and other aking powder items.
