Hi I need to figure out quantities for 100 people. chicken thighs done in bbq sauce, meatballs done in grape jelly/chili sauce, ham, scalloped potatoes, mac & cheese. potato salad, green, salad, and a couple of other salads is what we are planning on serving.

You need to make an effort to use the tables on site.
All of these:
chicken thighs done in bbq sauce, 1 piece per person plus 10%
meatballs done in grape jelly/chili sauce, 1 pound per 5 guests
ham- 1 pound ready to eat per 5-6 guests

scalloped potatoes, about 30 pounds of potatoes
mac & cheese, about 8-10 pounds of dry pasta

potato salad, green salad, and a couple of other salads
for each type of salads you need about 120 servings, for example green and veg salads are same types, potato and pasta are same type. See plan for 100 page.

You need a nibble table with punch and 2-3 items for the hour between the service and the dinner.
