Ellen, I am doing a party tomorrow for 75-100 people with a mexican theme. I am planning on chicken enchiladas and Chile verde as entrees for the event and I would like some help with ingredient amounts so I make sure to have enough for everyone!!!

You need 2 enchiladas PLUS 3/4 cup chili verde per person. Plus rice and beans and salad. See also the taco bar article for some help.
