Hi Ellen,
I have been reading a lot of pages for ozs per person and it seems that most chefs do 30-40 oz of food per person. almost 2.5 lbs of food per person? That seems like a lot! What do you figure is a safe number of oz per person? Also they don't say if this is raw or cook.
Just curious because I cook for our church quite often and I always have too much food left over.

I plan 18 ounces ready to eat food per person for a self-served meal. Try using my tables, you will probably have less leftovers. One group from upper New York who cooks for retreat weekends (100 people), said they usually have only a quart left over.
