I am make a lagsana dinner, will be serving lagsana, manacotti, veg lagsana and italian sausage with green pepper in tomatoe sauce. How much of each do I need.

Assuming a meat lasagna, you only need 1 pound of sausage for each 4 people, plus an equal weight of peppers.
I would do 1 9x13 pan of lasagna for each 10 or fraction, so, that would be 6-8. 1/4 to 1/3 would be veggie, the rest meat. 1 manicotti per person, maybe one extra pan, probably none left over.
