Dear Ellen:

I will be making chicken marsala for 80 people for a wedding reception. My question is can I cook the chicken the day before. Also, can I make the sauce the day before then heat everything up in the oven the day of the reception. I will be putting the dish in chafing dishes to keep warm.

Any help would be appreciated.
