Turkey Pot Pies

I am going to do a lunchen for volunteers in a couple of weeks and was thinking that turkey pot pies might be fun and something I can do in advance. Do you have any suggestions/recipes for quantity pie crusts and filling?

When I used to make this for 10-12 people, 2-3 9x13 pans, I used the large bag of frozen mixed vegetables, 2 quarts gravy made with broth and stock, 6-7 pounds whole chicken. Pie crust for 2 pies for this much pot pie.

I think I want to do them individually. Would you suggest top and bottom crusts or just the top? By the way the luncheon is for possibly 50-60 volunteers including their families. And I do have a 20 quart mixer and access to a commercial convection oven.

Just the tops, the bottoms are often soggy and many won't eat them anyway.
