I need to know in pounds or how much chicken (boneless skinless breasts) to purchase to make 600 mini croissants to be stuffed with chicken salad.

Boneless skinless chicken makes 2 cups of meat per pound. So figure the amount of cups you need for your recipe, and convert to pounds
The sandwich page has my estimates on gallons per 100 people for chicken salad.
