I'm cooking rice at a 4th of July event in our community and will be using a camp chef propane stove to cook the rice in large stock pots. How many serving of rice can I cook at a time and be successful? Can I hold the rice at a safe temperature in roaster ovens without burning it or scorching it?

Yes on the hold, at temp 180, covered. You are much less likely to scorch the rice if you actually cook it in the roasters; large pots of rice over propane are almost an invitation to scorch, not to mention that it takes about 20 minutes per gallon to bring the water to a boil.
