When serving 5-6 salads for a picnic type meal do you prepare enough of each salad to give everyone a serving or do you cut back on it a little because not everyone will eat each kind of salad?

You need to aim for 10-12 gallons total per 100 people, nut counting the tossed salad. People usually take about 2 1/2 actual servings (instead of 1) when faced with a delectable selection of made salads.
