I would like to set up 25 tables of ten people each with a plater of at least 3 kinds of cheeses and 2 kinds of crakers, how many pounds of cheese and cracker would i need to fee everyone.

Marie, the amount depends on whether this is just wine and cheese or whether there are other things as well, and what time the party is. See the cheese and wine button at the top of the main cook talk page for a start, then make some estimates and write back.
