Your recipe at www.ellenskitchen.com/bigpots/plan/texmex1.html indicates to toss salad ingredients with dressing the night before. Won't the lettuce become soggy? I plan to use the shredded in the bag variety of lettuce.

You do not have to do it the night before.If you do, it has a texture more like a southern "chopped salad". If you mix just before serving, more like a regular taco.
