Roaster Oven and potatoes

Hi Ellen,
I was wondering if anyone had made home fries in a roaster oven? and if so how many lbs can I put in one oven? I need to make about 80 lbs will cube them about 1 1/2 inch. add oil, butter, onion, green peppers, and seasonings.

You can't get the crispiness that is a feature of this dish in a roaster oven. You might be able to come close in a convection oven. If it were me, and I wanted to use roasters, I would turn the potatoes into frozen hash browns (as described in the OAMC potato plan article on site) and make cheesy potatoes.
