Warm Weather Safe Tzatziki
I am doing Tzatziki for 200 with Hummus and Pita as one of four sides for a Mediterranean BBQ. Real Tzatziki is Yoghurt based and does not stand well in heat. Can I cheat and use commercial bulk sour cream instead? Any recipe suggestions that will with stand 4 hours in 80 degree temp?
Yes, sour cream works very well. Put the bowl/tray into/on a bed of ice in a larger bowl/ tray, or else you must discard it and put out fresh every single hour at this temp.
