Re-heating foods in chafing dishes

I am cooking chicken parm, sausage and peppers, and buffalo chicken wings the day before the party. I want to re-heat all the above in aluminum trays over the sternos. Also, I bought frozen manicotti, I wanted to layer them in the aluminum tray and cook them over the sternos, covered with foil. Do you think this will be a problem. I cant use the oven, I will have other foods cooking in there. I don't know any other way
to get the items warmed.
