almond paste question

I was looking for a basic recipe for almond paste and found it here. The only thing is I am making pignoli cookies for my mom at xmas and she can't have corn syrup. Could I substitute honey for the 2 tbsps of corn syrup or will it have a damaging effect on the end product?

Yes, use a very mild, light honey.

On a different but related point - the amount of sugar in the two recipes posted on this site is rather different. I am making a LOT of almond paste and over $80 worth of almonds have learned that it's best to make the softball syrup in a large batch and add only enough to get the right consistency.

Good point, nuts do vary in their absorbing abilities based on age, dryness since grinding, etc.
