| pat 12/11/08 | I was looking for a basic recipe for almond paste and found it here. The only thing is I am making pignoli cookies for my mom at xmas and she can't have corn syrup. Could I substitute honey for the 2 tbsps of corn syrup or will it have a damaging effect on the end product? |

I am making a LOT of almond paste and over $80 worth of almonds have learned that it's best to make the softball syrup in a large batch and add only enough to get the right consistency. |
