Crockpot Cranberry Relish

8 servings- Makes about 3 cups. You may triple this recipe and prepare in a 6 quart crockpot

1 pkg (12oz) fresh cranberries, rinsed and picked over
1/4 cup thawed frozen orange juice concentrate OR Granny Smith apple juice concentrate
1/2 cup mild honey*
1/2 tablespoon molasses*
2-3 tablespoons raspberry or cider vinegar
peel of one orange, slivered or grated, optional
1/2 cup dried apricots, slivered
1/2 cup golden raisins
1/2 cup walnuts or pecans, toasted and chopped, optional

*1 cup packed light brown sugar may be substituted for the honey and molasses.

In 3 1/2 qt crockpot, mix together the cranberries, juice concentrate, sweetener, and vinegar. Cover and cook on LOW about 2 hours. Addd apricots and orange peel and cook one more hour or until cranberry skins pop. Turn off heat.
Stir in raisins and nuts. May be served at one but improves if you cool, then transfer to a covered container and refrigerate.
