beef fajitas for 30

I am having a party fo 30 people with beef fajitas, black beans and rice. How much skirt steak will I need as well as rice and beans? Thanks so much!

Hi Kimba, another person just asked the same question at the bottom of a different thread, thanks for starting one fresh- this is a very typical question this time of year.

You want 1/3 of one of my recipes for 100 for your rice and beans- there are a bunch of choices for that- you can do a search or look through the Big Pots main page.

If you are having only one meat, if you are having plenty of grilled red and green bell peppers and fresh grilled onions mixed in with the meat, you can get away with 2 pounds lean raw boneless for every 5 persons, but if not, do allow 1 pound for every 2 persons.

If you have 2 meats, such as beef and chicken, the total amount must be increased by about 10%- people will eat more and take some of each. A typical split for a party meal is 5 ounces ready to eat beef PLUS 3 ounces ready to eat chicken.

If you also have shrimp, 1 pound raw shelled headless for each 3 people, plus 5 ounces total of the other cooked ready to eat meats per person.
