Ellen, We are having a picnic for between 75 and 100 people. I wanted to know if you thought I had enough food or not. I have 10 pounds of chicken, 10 pounds of shrimp, 2 racks ribs, 4 london broils, 5 pounds sausage and peppers,60 hamburgers and 50 hotdogs |

Is this a family party, business, church, or what, this makes a bit of difference in the planning. Quantity wise, you have enough meat. The difficulty you will discover is that when you have both premium (shrimp, ribs) and mundane meats, the premiums run out and people tend to notice what they did not get instead of the nice things they did get. If this is a pot luck, they don't mind so much, but if it is one host, they notice. I might hold back the ribs entirely, or skip the hot dogs, cut the burgers in half and get enough ribs that there is 1 each. I might serve the shrimps as an appetizer, cold with toothpicks, so people would just take a few. To have a 3 ounce serving for 100 people, you need at least 20 pounds. Hope this helps. |
