Last year I tried cooking rice for 120 people on the stove top. It was a gummy mess. I've read that the best way to prepare a large quantity of rice is in the oven. Any pointers for liquid-to-rice ratio (any adjustment needed?). Also, what's the best cooking time and temp? Thanks!! |

I have posted quite a few recipes for 50-100 with the oven method in the rice dishes and rice side dishes sections of the Big Pots section, which have details on rice/water ratios. The other thing is, you will have the fluffiest rice if you use converted rice (like uncle ben's) or at least an extra long grain rice like basmati. |
