Stephanie, all these foods are covered in the plan for 100 lists. Since I posted my quantity planning lists in 2004, I no longer do intial estimates- too many requests! I suggest you read my section on planning a turkey/holiday meal at the top of big pots, look at the plan for 100 lists, and make your estimates. Then post them and I will be glad to check them for you. Also, you have a lot of planning about set up, serving and cleanup to do- you might want to look at my article on wedding dinners, the button is at the top of the main cook talk page. |

You want about 4 ounces ready to eat beef (that is 1 pound raw lean boneless for each 3 people) PLUS 2-3 of sausage per person. This means everyone gets what they want with modest leftovers. |
