Hi, I’m hoping someone here can help me figure out what I’m doing wrong. I have a recipe for Almond Paste which consists of 1lb of blanched almonds, 1tbl. Almond Extract, 1 c water, 2 c sugar. I have been blanching my own almonds then letting them dry for about a day or two then grinding them in a Vitamix mixer. I then add the water to the sugar and boil to 240 degrees and add (slowly) to almonds with the almond extract in my stand mixer. At that point it looks perfect and tastes good. When it cools I shape it into a log and wrap with wax paper and store in the refrigerator. About 5 days later I went to use it and it was bad, it tasted sour or fermented and I had to throw it away. This is the second time I’ve made this, the first time I left it out on the counter thinking it’s only Almonds a sugar and it didn’t need to be refrigerated. That one also went sour within a few days. I though the refrigerated one should have been fine. Any one have any ideas what I’m doing wrong?

Almonds have fat, and the vitamix heats them as it grinds. You are having rancid fat problems. Also, yeasts and bacteria LOVE to eat sugar. Freeze it as soon as you make it. |
