Can anyone help me locate a source for carbon steel chef's knives—the old-fashioned kind, NOT "high carbon". I've been searching unsuccesfully in stores and also on the net.

Hi, MF,

The best sources at this point are probably garage and especially estate sales, used restaurant equipment sales, or a Chinese or Japanese market. Rust cleans off (dip a cork in scouring powder and rub in circles) and a GOOD experienced knife sharpener (who will charge $3-5 per knife) can reset the shoulders and rehone the edge of the blade.
