Can anyone help me locate a source for carbon steel chef's knives—the old-fashioned kind, NOT "high carbon". I've been searching unsuccesfully in stores and also on the net. |

Hi, MF, The best sources at this point are probably garage and especially estate sales, used restaurant equipment sales, or a Chinese or Japanese market. Rust cleans off (dip a cork in scouring powder and rub in circles) and a GOOD experienced knife sharpener (who will charge $3-5 per knife) can reset the shoulders and rehone the edge of the blade.
