I am planning a wedding reception for a approximately 40 people. The wedding and reception are both at my home. Planning buffet luncheon for late afternoon. How many sandwiches and sweets should I prepare, also fruit and vegetable trays. |

This is an appetizer type situation and you may want to read my appetizer planning guide. You want about 1 pound of food per person, which will work out to about 12 little servings or "bites". One of each type tea sandwich, or one full sandwich (see the sandwich event page). Fruit and vegetable trays each have a page with very extensive quantity info. For sweets, people love it when they are small so they can have one of each. Congratulations on planning a sensible size and time for this do it yourself event. Very good start to your new life. |

I have a question regarding my daughter's upcoming wedding rehearsal dinner. Her fiance's step mom wants to have lasagna fixed in AL about 4 hours away and brought by car to the site in Ga. I don't think it would be safe to serve this food to our guests, do you? |

Not safe unless it is frozen then baked on site, or carried in professional catering hot chests called cambros to keep temp above 145 degrees for the entire trip. |

Di Yonna, first you would do chicken for 200 and fish for 100, as chicken is preferred. You are looking at $10-12 minimum but you may go up to 18 when you add in other items like rolls, butter, salads, the gravy, tea, etc. |

about how much would you charge for lasagna - meat and vegetarian, steamed vegetables, garlic bread, salad, strawberry shortcake and tea for 300 guests? Also what if I added some more cold and hot finger foods to go along with it? Thanks |

Your charge should be 3 to 4 times the straight cost of the food itself. |

Hi, not nearly, for 225 people you want at least 80 pounds for medium baked size, more if larger. You also want at least 1 pound salad for each 5 people and at least 22-23 dozen rolls. Do you want some suggestions or is the question about just amounts? |
