prepping for scrambled eggs the night before

I am planning an employee breakfast for 120 to be served at 6 AM. Is it safe to crack the eggs for scrambled eggs the night before and store in the fridge? If yes then as a follow up, Is it ok to mix the scrambled eggs the night before?Thanks

Becky, you can buy pre-mixed safe scrambled egg mix at restaurant supply stores. If you crack them yourself the night before, ONLY USE pastuerized eggs (Davisons's brand), move straight to the fridge- don't mix or beat stuff in- the less chance of contamination, the less time it sits, the safer.
