Luncheon w/ beef tenderloin and smoked whole turke

I am doing the meats for an after-funeral service reception for 100. I am planning on cooking tenderloin (or a whole sirloin) and smoked turkey w/ rolls. There will also be a couscous salad, roasted asparagus, dolmas, and cheese and fruit platters. How much turkey and beef would you suggest? Thanks!

A very nice lunch! If this is at a regular mealtime, I would allow 4-5 ounces of cooked ready to eat tenderloin and 3 ounces of cooked ready to eat turkey for each person. On a buffet, tenderloin is like shrimp- no matter how much you put out, it will all get eaten. One way to reduce the total to the above is to have someone slice and serve the beef.
If you cook the tenderloin medium rare, you have only about 20% shrinkage, so 30 pounds is the minumum raw weight, about 42 the max. The family will happily eat the remainder if you cook more
