Hi, I want to cook a whole beef brisket in my nesco 18 qt roaster oven which I have never done before. I am pretty good on the smoker with one but not with the nesco. I was thinking about putting carrots, potates and celery and onions, some can tomatoes around and over it and cook on about 275 for oh I don't know 6 hours maybe does this sound like the correct way to do it. I am not sure how much liquid to add. Any help would be greatly appreciated. Thanks, Bob |

You don't say how large. This is a good way to cook brisket, but do trim some of the fat layer and do cook fat side up. You can use a dry rub. Start at 350 for an hour for the first pound and turn to 225, cook about 50 minutes for each remaining pound for a whole brisket. Prbably, with tomatoes in juice, you wouuld have enough liquid. Roasters cook moister than regular ovens. |

The ones I saw at wal-mart were between 9 & 10 lbs they are whole with both flat and point still together. I have wanted to try this method for awhile. Thank you very much for your help. Bob |
