Help fast ! Need amount of gravy for 100

I'm doing a brunch for 100, FRIDAY, 11/3/06. I want to serve biscuits and gravy (as weather has turned cold) - how much gravy will I need ?

I wrote a reply a while back about sausage gravy, a recipe which is also known as country gravy and sawmill gravy, and I can't FIND it!. Each pound of sausage makes 8 servings, or serves 6-7; here is a good basic recipe:

NGREDIENTS

* 1 pound ground pork sausage, usually sage - use really good sausage
* up to 3 tablespoons bacon grease
* 1/3 cup all-purpose flour
* 3 cups milk
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper

DIRECTIONS

1. Brown sausage in a large heavy skillet over medium-high heat. Set aside, leaving the drippings in the skillet.
2. Mix bacon grease into the sausage drippings, adding enough to give about 1/3 cup grease. Reduce heat to medium, combine with flour, and stir constantly until mixture just turns golden brown. There should be NO lumps- if there are any lumps, they will become concrete when the milk is added.
3. Gradually whisk milk into skillet. When the mixture is smooth, thickened, and begins to bubble, return the sausage to skillet. Season with salt and pepper. Reduce heat, and simmer for about 15 minutes.

Most people add more black pepper. You can lighten by omitting bacon grease and using a turkey or chicken sausage for all or part. It does need WHOLE milk for best flavor.

Assuming this is the only main course, for 100 people, start with 16 times the sausage, flour and milk. But use only about 2 tablespoons of salt total without the bacon grease, or even less with the bacon grease- taste- many sausages are quite salty.

Put it in crockpots or a roaster to keep it warm. Everyone just ladles it out onto hot biscuits. The bacon grease is the secret to the flavor of this gravy.
