i am wondering on the amounts to order. i used your guidelines for raw amounts vs what they ordered last year.can you help guide? mashed potatoes - last year ordered 160# - your formula of 3 people to a pound is about equal - but how much butter and milk? also glazed carrots - how much sugar/honey/etc? do you have a table for the other ingredients to help me? thanks. |

If you need RECIPES for standard foods, try the Navy logistics cookbook, the link is on the Big Pots page. And watch your math; 800 people at 3 people per pound is about 265 pounds, not 160. Then use the recipes I have to figure the rest. |

I am co-chairperson for our church carnival this summer. Could you tell me how much of each of the following I'll need to serve 800? It will be served Buffet Style. Mashed potatoes..I saw where you listed 3 persons per pound. Saurkraut Polish Sausage Chicken Noodles Green Beans Dinner Salad

Using the plan for 100 page you want 8 times the amounts, his dscusses everything but the meats and sauerkraut. Sauerkraut is usually only 1/3 to 1/2 cup per person, for this menu I would fgure 1/3 since not everyone will eat it. Sausage, get 1 pound for each four people PLUS 65 pounds chicken pieces per 100 persons. If you prepare estimates and post them, I will be glad to look them over for you. |
