I am setting up a sandwich buffet for a walk-a-thon this Saturday. I'm a bit unclear on quantities for the meats, how many lbs?

Erh, how many people? You want about 1 pound deli sliced for any 5 people plus 2 ounces of cheese per person.

I also am catering a sandwich luncheon with approx. 60 people and I don't know how much lunch meat to purchase. I will be having potato and macaroni salad, chips, drinks and cookies. Should I plan for each person to have only one sandwich?? How many rolls??? And also how do you price for such event? Thanks. I'm glad I came across your great site.

Go to the sandwich event page and use 2/3 the amount for 100. Your salads are covered on te plan for 100 page. The food cost should be 1/3 to 1/4 of the total cost- use 1/3 if you don't have to hire help, rent tables and equipment, etc, in other words you are dropping off the food.

Be aware that in most states and counties it is illegal to prepare food for sale in a home kitchen. You can use any publicly licensed kitchen such as a church or cafeteria kitchen legally.

See the very first question on this thread, then the sandwich even page for everything you need to know for sandwiches and condiments for 100 people. You want about 3 1/3 gallons of potato salad and 2 1/2-3 gallons of pasta salad- the pasta salad is easy to make and I have many recipes for both pasta and potato salad posted.
