Is their malt powder what you mean by diastatic malt powder. You explained why and when I use diastatic vs non-diastatic but what does the "diastatic" mean when speaking about malt powder. Thanks. | ellen 09/16/06 | Diastatic refers to the enzymes produced when the grain is sprouted. Non-diastatic acts as a sweetener, but not such enzyme activity. |
