I am getting married and have a guest list of 150. How many pimento cheese sandwiches and chicken salad sandwiches should I make for the reception? How many pounds or ounces of each should I buy? Thanks for your help!

Lauren, this depends completely on what time your reception starts, how long it lasts, and what else is served. If this is a mid-afternoon tea, you want to add some other items and other flavors of sandwiches - at least 4 to 5 kinds. If it is a lunch time meal, you will need at least twice as much.

If it is a midafternoon tea, you can add the line, "tea reception to follow" to the invitations, this let's guests know what to expect.

Lauren, you will need enough food for lunch for each person- so 2 sandwiches total per person. I have a whole section on sandwich events with quantity tables and recipes and suggestions. You may want to add a slaw or fruit salad and a pasta or potato salad.

I am having a small reception for 50 people. I will be making ham salad and chicken salad sandwiches on medium size croissants. My vendor for the salads sells by the pound. How many pounds should I buy?

One pound will make about 6 medium croissants. I usually allow one of each per person with two choices.

My dauther is getting married in August with the reception starging about 5:00 pm. We are planning on pulled pork sandwiches. I will be cooking on a slow cook charcol grill for the "pig roast" flavor. Can the cooking be done a few days early and warm up at the reception? I plan on using roasting ovens for the final warming up.

I would also appreciate a simple pasta recipe using Italian dressing. Thanks

As long as you cook the pork all the way done, you can sauce it and refrigerate it and it will actually add a bit of weight by soaking up sauce- great for the sandwiches.

I have a very simple pasta salad recipe actually listed in my plan for 100 list- the very first item- but there a a bunch of really good and more interesting salads in the slaw, mac and potato salad page which has a link at the bottom of that recipe.
