hello, my daughters 3rd bithday party is in a few weeks. we are having a lunch meat tray. any ideas on how to keep the lunch meat cold for a few hours. i am concerned about the cheese going soft since the party is outside and it has been very hot and humid where i live. thanks in advance |

You are right to be concerned, and not just about appearance, this is a food safety issue. You can make some giant ice cubes in the disposable flat containers now available with snap-on lids. You fill 3/4 full, snap on the lid, then freeze. Place UNDER the meat or cheese as part of the display and it will keep the meat cold several hours. Don't save and reuse meats that have sat at room temp for 2 hours- discard them. So it is better to make smaller trays and change them every hour, rather than to put everything out at once. |

Many freezing manuals suggest not to freeze deli meats. I have had good luck for up to 1 month provided the meats are fresh and go straight from the store to the freezer. |

i am hosting a community christmas at our small town cafe. hopefully a lot of people will show up!! we are planning to have hot and cold appetizers, desserts, chips and dips. what kind of lunch meat and vegetable tray do you suggest? |
