People are so greedy for shrimp! For appetizer size portions, allow 3 ounces cooked, shelled, shrimp per person (tail on is OK but this is basically ready to eat). And this is kind of bare minimum. With this amount, it is a good idea to portion into clear acrylic cups or dishes, or skewer each serving, so everyone gets some. |

Basically, since the shrimps will add to the entree, start by allowing 2 tacos- 1 beef, 1 chicken- per person, total 80 shells. Use the baked potato bar for the toppings amounts, taco prep info on the tex mex taco page. For the rice and other side dishes, use 1/3 of the amount for 100. There is a page for dessert planning for 100. There is also one for salads, entrees and sides and another for beverages. Shrimps are one of those- "people will eat all you put out" things. Allow 3 ounces per adult, 1 pound for every 5 people |
