Brunch casserole for 50

Hi there, I have a wonderful crockpot recipe for an overnight brunch casserole. (It's basically eggs, cubed ham, cheese, & tater tots, serves 6 when cooked on low 8 hours or on high 3-4 hours.) We are having a baptism brunch for 50 people and I want to multiply this recipe by 8 and cook it in a roaster. Please help me figure out how long to cook it in a roaster (I can start it in the morning; I don't want it to cook overnight because that would probably dry it out.) Thanks!

Turn the roaster to 250, grease/butter the pan well before filling (I butter, then coat with grated Parmesan, the dry kind from a can), do not make the layer of stuff more than 4 inches thick. Bake 3-4 hours covered. Use a thermometer to check the temp in the center after 3 hours, if it is 160 or above, turn the roaster down to 200. If you use cold milk it adds up to 30-6- minutes to cooking time.

I often add some slivered sauteed bell pepper and mushrooms to this type recipe to lighten it up.

Thanks, Ellen. Why coat with the Parmesan (probably a dumb question)? I am not sure I want that taste in the casserole. I really appreciate your time and your website; wish I would have found it sooner!!

You could use dry bread crumbs, Just provides an extra "anti-stick" layer.
