Don't know Rafferty's. I make basic chicken salad with 1 part coarsly chopped skinless boneless chicken or turkey, 1 part finely diced celery, 1 part chopped fresh parsle and 1 part, approximately, really good mayonaisse. Add the custom bits such a sgreen gapes or sliced almonds to this and you will have no complaints. Quantities in the plan for 100 lists, varies depending on use (sandwiches, reception, etc) |

Look what I found for you: RAFFERTY'S SUNSHINE CHICKEN SALAD WITH SWEET ORANGE DRESSING
FRUIT: Heat oven to 350 degrees. Prepare melon cubes. Toss together in a bowl with lime juice. Reserve. Brush both sides of the chicken breasts with olive oil, sprinkle with salt and pepper, and bake for 35 to 45 minutes, turning once, until chicken is cooked through. Cool, then shred, or cut into 1/2-inch cubes. Place in large mixing bowl, and add the diced onion and celery and drained pickle relish. In a small bowl, whisk together well the mayonnaise, vinegar, sugar, mustard and chicken base. Fold the mayonnaise mixture into the chicken mixture a little at a time, until the salad reaches the consistency you like. You might not need all the mayonnaise mixture. Fold in the chopped hard-boiled eggs and the grapes. In a blender container, add the undiluted orange juice concentrate, marmalade, lemon juice, cream and honey. Blend well, until frothy. (It is best to do the blending just before serving.)
To serve: Line individual salad dishes with 2 or 3 lettuce leaves. Place a scoop of the chicken salad on the leaves. Surround with the melon cubes. Note: Chicken base is a concentrated chicken flavor essence. It can be found in groceries and specialty stores, either refrigerated or frozen. |

this is by far the best chicken salad in the world!! It's the perfect combination of sweet and salty and with the sweet orange dressing and fruit, you'll be in heaven after you take your first bite! |

Ellen I thought that the Rafferty's were out of business, I am glad that I went surfing through your website and found this. I am planning on having some Pampered Chef's house parties and this would be a really great change from the norm cold cuts and chips etc. When I have people over I try to have something different but also delicious. Thank you Teresa for bringing me this idea. |
