| ms 05/01/06 | How many pounds of sweet potatoes and carrots (raw weight) should I purchase to yield a 5 ounce portion of roasted cubed vegetables. I need to serve 80 people . The food will be served to them and the portion will be controlled. How much extra should I figure so that I don't run out of the side? Are you familiar with the percentage loss for each of these vegetables and how to figure the yield or where I can access a website to provide me the info. Thank You. | 
| ellen 05/02/06 | Not clear whether that is 5 ounces each or 5 ounces total, and whether you mean 5 ounces by weight or 5 ounces by volume, just over 1/4 cup. Carrots, tops off, you need 16 pounds as purchased for a 3 ounce (weight) serving for 50 people. Sweet potatoes 1 pound fresh raw as purchased yields 1 1/2 cups, you need 17-25 pounds raw for 50 servings (depends on size, twistiness, etc., as peeling loss can vary a great deal). |
